Read the game regulations in your state. Rabbits may or may not be an all year game animal. They rules and applicable rules should be explained. If you do not have the required license and permits, you could be charged with poaching.

depends on what state you live in. Here in New Mexico you can shoot rabbits any time you want and you do not need a license

Just read the game book to find the seasons, any creek or brushy area will usually hold rabbits, since your using pellet guns and not shotguns you will need the rabbits to stay sit so if you want a running rabbit to stop try whistling at it it worked a couple times for me, stopped right in their tracks, don’t ask why this works.
